Starter: Beetroot cured Chalkstream Trout

Served with horseradish sorbet, marinated beetroot, apple purée and watercress

Main: Assiette of Lamb

Roast rack of lamb, potato rosti, glazed lamb sweetbreads, pressed lamb belly croquette, smoked aubergine caviar, baby fennel, lamb jus, shallot and garlic purée

Dessert: Raspberry & Ruby Chocolate Tart

Served with a raspberry sorbet, Chambord Chantilly cream and fresh raspberry
